Mochi is Japanese rice cake made of short-grain glutinous rice. The rice is pounded into paste and molded into the desired shape. Each mochi is soft and squishy and is a rice cake that contains anko (red bean paste) flavoured filling. Anko (sweet red bean paste) is the crucial ingredient for Japanese traditional confectioneries. It is a paste made with Azuki (red beans) and sugar.
